Kale, Mushroom, Tomato Frittata

Not sure about you but I am ALWAYS looking for quick meals during the week. Most days I will get home, change into workout clothes, and head straight to the gym to meet Alex. We spend about an hour at the gym and both end up starving when we get home. Alex will usually grab a snack while I head straight into the kitchen to start dinner. I rarely let him cook. Call me crazy but the kitchen is my place. I don’t really even let him help prepare the food. Which I should probably work on doing… anyways, my goal on these nights is to have dinner ready as soon as possible. Frittatas are starting to make their way into our rotation quite often. Frittatas are a great way to use up those veggies that are about to go bad or overflowing from the fridge. This happens often with our tiny little fridge. Our landlord, back when we weren’t living here, bought a small “apartment” sized fridge. Now, yes, we live in an apartment. But it is a nice spacious apartment with more than enough room for a full size fridge. The tenets who lived here before us never cooked. Ever. Blows my mind considering I cook 5-6 nights a week. It is hard to fit a weeks worth of fruits and vegetables into our little fridge which means when the weekend gets close, I need to use up veggies to make room for next week’s meals or leftovers.

The other day I had half a bag kale, a container of mushrooms that were on their last leg, a random roma tomato and about a 1/3 container of cherry tomatoes hanging out in the kitchen. First thought was omelets but that’s too hard because I can never flip them or keep them from falling apart. Plain sauteed vegetables with some protein side didn’t really sound appetizing. Next logical step was frittata. They are quick, easy, and delicious. Plus they make great leftovers!20140407_184536

I sauteed up the veggie, added the eggs, a few seasoning and some cheese then let it cook up first on the stove top then under the broiler. The whole dinner took about 20 minutes from start to finish. It helped that the kale and mushrooms were pre-cut. Frittatas are versatile, use what you have on hand! I had some Parmesan and some scamorza cheese. The scamorza cheese is a wonderful melty Italian cheese that I bought for pizza. We have a ton of it leftover after making our one small pizza. It added a fun stringy, melty, gooey aspect to our frittata. Sooo good.


Veggie Fritatta with Kale, Mushrooms, and Tomatoes (serves 6)


  • 8 eggs
  • 1/4 cup milk (I used skim)
  • 3.5 cups Kale
  • 1 pint sliced mushrooms
  • about 1 cup tomatoes diced (I used 1/3 container of cherry tomatoes and 1 small roma tomato)
  • 1.5 Tbsp canola oil
  • 1 ounce shredded parmesan
  • 1.5 oz scamorza cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp dried minced onion
  • salt and pepper to taste


1. Using a large oven safe skillet (I used my cast iron skillet), heat the canola oil over medium-high heat. Once heated, throw in the mushrooms and tomatoes. Season with salt, pepper, and minced onion

2. Beat the eggs with the milk, and garlic powder. Add in the cheeses

3. Once the mushrooms and tomatoes are cooked thoroughly, add in the kale and let wilt for 2-3 minutes. Stir frequently

4. Add in the egg and cheese mixture and distribute evenly

5. Cook for about 2-3 minutes on medium-high heat.

6. Turn on your broiler and pop the entire pan in the oven about about 6-7 minutes. Watch carefully and rotate your pan as needed to avoid burning. Mine took 6 minutes until the eggs were set.

7. Let sit for a couple minutes before cutting into the frittata. Serve with a side salad or fruit.

We also like ours with some ketchup and mayonnaise.  This comes from when we spent a semester in Spain and would have tortilla de patata. It was always served with mayo and ketchup. Alex’s senora would send him and his roommate Andy on trips with tortilla on french bread with mayo as a travel meal. Frittata leftovers are wonderful this way too. Give it a try. Absolutely delicious.

Lemon Blueberry Oats

For those of you who do not know me, you should know that I am extremely type A. I plan my meals. I eat many of the same things every day. I make lists upon lists upon lists. I love routines and planning. My weekday breakfast always include either overnight oats, whole wheat waffles or a breakfast burrito when I’m feeling crazy. We keep our freezer stocked with homemade breakfast burritos. I can’t remember where I found the recipe but it was from pinterest. Lunches always include an apple and baby carrots and either a sandwich, salad or leftovers. Dinners vary at least. But on the weekend. That is my time to play with my breakfast and lunches. Though I will admit some mornings I still have my staples.

This morning I decided to play with my oats. Anyone’s mom ever tell them not to play with their food? I know mine did. But, I guess this is more of experimenting. Over the summer I bought some lemon extract from Penzey’s Spices to try these pancakes. Yes, I bought it with that sole purpose. Now, I needed to make something different with it. Why not adapt that idea and make it into oatmeal?

I took the general recipe for oatmeal: 1/2 cup dry oats, 1 C water, small pinch of salt and pumped it up with 1/4 cup (maybe more) of blueberries, 1/2 Tbsp chia seeds and a dash of lemon extract. I was hoping to not have to add any sweetner but my blueberries were a little on the sour side so I ended up adding 1 tsp sugar.  Holy yum. Not only was it a super filling breakfast but it was tasty. If I had some coconut in the house that would have gone into the mix but alas I did not have any. The oats were just as tasty without it though.


Lemon Blueberry Oats (serves 1)

1/2 cup dry old fashioned oats (I don’t like using quick oats in recipes but you can if that’s what you have. Just decrease cook time)

1 cup water

pinch salt

1/2 Tbsp chia seeds

1/4 cup washed blueberries

1-2 dashes lemon extract

1 tsp sugar (I used white sugar but feel free to use stevia or truvia or some other favorite sweetener)

1. Bring water to boil in a small pot. Once boiling add pinch of salt, oats and chia seeds. Stir it all together

2. Add in lemon extract and blueberries stirring well

3. I popped a couple of blueberries to let a little of their pretty color run and release some of the juices.

4. Taste, if needed add 1 tsp sugar or sugar substitute.

5. Cook for a total of 5-6 minutes.

6. Eat piping hot with some coffee. Perfect weekend morning breakfast.

Nutrition Facts: 212 calories, 6 gm protein, 7 gm fiber, 5 gm fat

My Day in Eats

I mentioned how I joined in on Sweet Tooth Sweet Life’s 2012 Closeout Workout Challenge , I’ve also joined in on the Fitnessista’s Dine in December Challenge. I love these challenges because they both are something I am passionate about: food and fitness! For the Dine in December the goal is to eat in as many days as possible during the month of December instead of letting the holidays get the best of us and eating out for every meal. I thought it might be fun to show you what a day of eating looks like for me.

Breakfast started out as a waffle with cream cheese and chia seeds plus 2 cutie tangerines. I, also, had my chocolate from my advent calendar. It was a little sad looking. Good thing I went grocery shopping today!


After yoga I had a chia energy square from an organic market. It was ok, not my favorite thing ever. I’ll eat more because we have a bag of them and I hate wasting food.


Lunch was a honey ham and italian cheese sandwich on a Seeduction roll with mini bell peppers and an apple.20121203_124708

For dinner, I was supposed to make a skirt steak with roasted carrots and parsnips but my skirt steak was bad. Instead I adapted the original recipe to chicken breasts and made a gravy to put over the chicken and veggies. I’ll post the recipe tomorrow for anyone that is interested. It ended up being really good. Got two thumbs up from Dad.


Unpictured eats include my advent calendar chocolate and some chocolate fudge that Alex brought my family over Thankgiving. Good thing its almost gone because it tastes soo good and I cannot say no to a little bite each night after dinner.

Eggs and Dumplings

Everyone finish off their Thanksgiving leftovers? Ours are long gone. I really only made two things with my leftovers instead of eating them as they were. The first were eggs and dumplings. A family favorite. The other was Sing for Your Supper’s Mexican Quinoa with Chicken. The only change I made to it was I used our leftover turkey. It was awesome. Definitely suggest giving it a try sometime. 

Now back to the eggs and dumplings. This is one of those indulgent meals. It involves lots of butter, basically bread and eggs. I then smother it in ketchup. This breakfast is one of those after Thanksgiving meals that I look forward to because we do not do it often. Only when we have leftover dumplings after a holiday.

First take your dumplings and cut them into cubes, I use about 2 dumplings per person. Then add about 2 Tbsp of butter into a medium-large skillet pan. It has to fit your dumplings and eggs in it with room to stir it around and the dumplings to lay fat to get brown and crispy. Okay, once the butter starts to bubble, add in the dumplings and stir to coat with the butter. Let it sit for a few minutes before stirring. You want a golden crust on the sides. I try to crisp up at least 3 of the sides. Then crack your eggs in a separate bowl, 2 eggs per person. Whisk with fork, whisk whatever. Just scramble them up. Add them to your dumplings. Season with salt and pepper. We sometimes add caraway seed to ours but my sister isn’t a huge fan and therefore it was left out. Cook until the eggs are scrambled and cooked to your liking. Take some on a plate, smother it with ketchup or don’t that’s your call, and enjoy the delicious buttery taste.
